Although France is undoubtedly the country that most influenced the development of Louisiana, the Spanish were the first to get there, in the early seventeenth century. They found a number of native tribes living in the marshy bayous of this subtropical climate. In 1682, the French claimed all the land drained by the Mississippi in the name of Louis XIV and their settlers started to farm the abundant cypress. Natchitoches was established in 1714 as a permanent trading post on the river and rapidly become the centre of a vast network of cotton kingdoms; the port still functions today. The Black Code, drawn up by the French in 1685 to govern Saint-Domingue (today's Haiti) and established in Louisiana in 1724, gave slaves rights unparalleled elsewhere, including permission to marry, meet socially and take Sundays off. The black population of New Orleans in particular was renowned as exceptionally literate and cosmopolitan. After the Haitians rebelled in 1791, around 1,300 refugees arrived in New Orleans. The planters were very worried by this, fearing that the new arrivals were “propagating dangerous doctrines among our Negroes.”

In 1803 the Louisiana Purchase saw the land pass from French to Union control. The subsequent Americanisation of the region was momentous, as New Orleans became one of the wealthiest cities in the nation. Louisiana became the eighteenth state in 1812. Although it joined the Confederacy, it was never as fully engaged as the other Southern states, which employed far more repressive means against their slaves. Reconstruction after the Civil War was traumatic for Louisianans but their coffers were boosted by the discovery of natural gas and oil offshore. Later, sulphur deposits were also found: these three industries continue to dominate the economy. Farming is the other mainstay: crops include sweet potatoes, rice, sugar cane, pecans, soybeans, corn and cotton.

The Pelican State is one of the lowest lying in the country, with its highest point, Driskill Mountain, just 153 meters above sea level. Cajun country, on the alluvial plain, is dominated by the soupy bayous, coastal marshes and inland swamps. The Atchafalaya Basin is eerie: the bulk of its cypress was harvested last century, and now the twisted silhouettes of their stumps poke out of the sluggish waters. Further into the backwoods, fishing boats trawl for crawfish, passing a multitude of birdlife as well as the omnipresent sunbathing alligators. All the food in this part of the world is delicious: one of the specialities is gumbo. Further north in Ark-la-Tex, where the Bible Belt meets Texan ranches, in a landscape similar to the rolling hills of Arkansas, the Cane River National Heritage Area is a collection of restored plantation homes. Nearby Angola Prison is one of the most brutal penitentiaries in the country; it comes shockingly alive every September, when the authorities organises a gruelling prisoner rodeo.

A lot of visitors are happy to stop at visiting New Orleans, the legendary city whose bars and brothels were the crucible of jazz and the blues. Pappa Jack Laine, Louis Armstrong and Rabbit Brown all learned their trade here. Until 2005 it was most famous for its music and its astonishing hedonism, seen at its best in the outrageous Mardi Gras pageants. Hurricane Katrina, which destroyed large parts of the old city and saw an incredible amount of looting and violence, changed all that. New Orleans is now picking itself up again – the streets may be shattered but there will always be a saxophone wailing in the wind somewhere nearby.
